Me thinks it’s because the Bible is written by men, and the Israelites were trying to find their monotheistic religion separate from the other nationalities (polytheistic) around them, they editted out God’s wife in the Bible. In Jewish mythology, God or Yahweh was derived from the Canaanites gods and goddesses (see El and Asherah). In fact the jews were more henotheistic than monotheistic (thats why in the Old Testament, Moses kept telling them not to worship the golden calf and the “prophets” kept telling the israelites not to worship baal or the others gods. Now why would they do that? Because it was commonplace and I’m sure the Israelites believed in the existence of other gods and goddesses besides El (Yahweh, Jehovah).
